Our food values

At Gaia School of Costa Rica, we recognize that the health of the planet and the health of people are deeply connected. Our Food Program reflects this understanding by supporting student well-being through nourishing meals, a respectful mealtime culture, and a school environment guided by care and intention.

Nourishing Children
and the Planet

The food we provide nourishes children, supports learning, and reflects our commitment to the natural world. Our morning snack and lunch menu is fully plant-based, designed to be wholesome, balanced, and aligned with a nature-based school culture.

Meal times

Meal times are an important part of daily life at Gaia. Children, teachers, and staff come together to share food in a calm, respectful atmosphere. A blessing song is sung to express gratitude to Mother Earth, helping children develop appreciation for nourishment and abundance.

By eating the same foods together, students are encouraged to try new flavors and expand their horizons.

Eat the rainbow

A nutritious, plant-based snack and lunch are provided daily. Meals often include plant-based proteins such as nuts, seeds, sprouts, beans, and legumes, along with a colorful variety of fruits and vegetables. While families may follow different dietary approaches at home, we choose a plant-forward menu because it aligns with our school values and supports a thoughtful relationship with health and sustainability.

Through gardening, outdoor learning, and shared meals, we aim to foster an appreciation for nature and build the skills needed to care for it. Children are actively involved in planting, harvesting, and preparing whole, local, and pesticide-free fruits and vegetables from our garden.

In the long term, a working Farm will further strengthen this learning by teaching children how food is grown and prepared, an essential life skill for nourishing both people and the planet. A healthy meal also supports concentration, learning readiness, and overall well-being throughout the school day.

Compost and Regeneration

At Gaia, organic waste is not treated as something to discard, but as part of a living cycle. Food scraps from our kitchens are separated and composted on campus, where they are transformed into nutrient-rich soil used to nourish the gardens and plants throughout the school.

Students actively participate in this process by helping carry organic scraps from the kitchens to the garden, where they are combined with leaves and other natural materials and slowly transformed through decomposition. Later, during gardening classes, students use this same compost to nourish the soil beds and plants they care for throughout the year, experiencing the full cycle of regeneration firsthand.

Under the care of our gardening team, students witness how what once seemed unusable returns to the earth as nourishment and new growth. The compost system also helps reduce landfill waste and protects the surrounding environment from scattered trash and unnecessary contamination.

This daily practice is one more way students develop a tangible relationship with sustainability, responsibility, and the rhythms of the natural world.
